I’ve written before about trying meal delivery services like Blue Apron and Hello Fresh. I really love the concept of these services because I don’t love cooking, and often find myself with a lot of waste when I buy ingredients to cook for one.
I am pretty budget conscious, so when I spend extra money on something like a meal service, I want it to be worth the money. I found that I wasn’t really happy with the variety of vegetarian options or the healthiness of the services that I had tried, and I ended up cancelling both of them.
After feeling like I was in a food rut and eating the same thing for dinner most nights, I started looking for something new. I had seen a few ads for a plant based meal delivery service called Splendid Spoon. I had looked at it a long time ago, but decided to check it out again. I love when companies have introductory offers that you can try without a long term commitment, so when I saw you could get your first shipment for a discount, I decided to give it a try.

If you have followed this blog for any amount of time, you know that I love preparing things ahead of time. Another thing you may have learned is that I’m almost always snacking. I’m really active, and try to keep eating throughout the day. I believe this keeps me from overeating at meals or bingeing on unhealthy snacks when I’m starving.
I always have a variety of go-to snacks on hand both at home and throughout the day. I don’t count calories or try to spend too much time thinking about food, so I go for what I am hungry for at any given time. If I just completed a big workout, I’ll combine a few things for extra calories and protein.
Some of these ideas take a little prep—like boiled eggs and the Kodiak protein muffins. But a lot of them can be purchased and are ready to go! Some weeks I even clean and portion out things like berries and veggies, but some weeks I just grab them as I need them. Being okay with being flexible and not perfect in your diet is important!

Football season is one of my favorite times of the year. I usually host a superbowl party each year, and I’ve collected a lot of football decor and serving pieces over the years, but each year I like to make unique treats and snacks. A lot of these would be perfect for any type of sports-themed party or kid’s birthday party!

I’ve been curious about trying Hello Fresh for a while now. I’ve told y’all before that I am a terrible cook, and usually end up eating the same bland things for lunches and dinner. I also like the idea of having the right amount of ingredients for a meal, without having a ton of waste to throw away. Right now, I find it hard to use up perishable ingredients when I’m just cooking for myself.

This meal prep recipe was inspired by a superbowl party snack that my friend Amanda, over at Thirty-Two Degrees made. She brought some amazing greek pinwheels for one of our appetizers and they were literally SO good! I decided to make a “better for you” version to pack for work week lunches, and they turned out pretty good! Keep reading for the recipe below!

With how active I am, I end up really hungry throughout the day and try to honor my hunger with snacks. I try to keep healthy snacks on hand, so I don’t reach for junk food.
The last few weeks, I’ve felt like I haven’t been eating as good as I can, and I was looking at some energy ball recipes on Pinterest. When I ran to the grocery store, I totally forgot I wanted to make them and didn’t buy any special ingredients. So, I turned to my pantry to see what I could do with what I already had.
