Meal Prep Recipe: Greek Veggie Wraps

This meal prep recipe was inspired by a superbowl party snack that my friend Amanda, over at Thirty-Two Degrees made. She brought some amazing greek pinwheels for one of our appetizers and they were literally SO good! I decided to make a “better for you” version to pack for work week lunches, and they turned out pretty good! Keep reading for the recipe below!

Easy Pantry Ingredient Energy Balls

With how active I am, I end up really hungry throughout the day and try to honor my hunger with snacks. I try to keep healthy snacks on hand, so I don’t reach for junk food.

The last few weeks, I’ve felt like I haven’t been eating as good as I can, and I was looking at some energy ball recipes on Pinterest. When I ran to the grocery store, I totally forgot I wanted to make them and didn’t buy any special ingredients. So, I turned to my pantry to see what I could do with what I already had.

Blue Apron Meal Service Review

I was recently chatting with a friend about how difficult it is to grocery shop and cook for one person without being wasteful. I get sick of eating the same thing, so I usually keep meals simple, like salads or single servings of vegetables. My friend suggested trying Blue Apron, a meal delivery service and was able to send me a free trial offer.

8 Easy Packable Healthy Snacks

If you’ve followed my blog for a while, you’ll know I try to live a pretty healthy lifestyle. I’ve found that a good diet and daily exercise makes me feel so much better mentally and physically, but I also try hard to keep a balance so that I’m not obsessed with what I eat and the calories I burn.

Because I run 25-30 miles during an average week, I have to replace quite a few calories in my diet and it is difficult to add in snacks that are both filling and fuel your body, without spending lots of time preparing them each night. I like to keep packable snacks on hand to keep my energy up throughout the day and to keep me from grabbing a donut or cookie floating around the office.

Here are my favorite healthy snack ideas that are easy to prep and to keep on hand during a busy day:

Touchdown Football Cake DIY

I’m usually not a big baker/pinterest craft kind of person (my talents lie in installing ceilings and floors more than the finer crafts..). But, when it comes to Super Bowl Sunday, I go all out. Every year, I try to top myself with the best football-themed snacks.

This year, I offered to make a dessert for the party I was attending. I saw a couple of cute ideas for football field cakes on pinterest, but decided to do my own spin on one. My friends and I all went to the Minneapolis Miracle playoff game a few weeks prior to the Super Bowl and that was really the only thing we still had to celebrate at that point. (Sad).

I decided to make the Minneapolis Miracle in cake form, including cookie versions of the players and it turned out so cute! This idea could work for different sports (hockey, basketball, volleyball) and would be perfect for a birthday party or team celebration.

Style + The City: Fall Travel in Chicago

Chicago is only a quick hour flight from my home in Minneapolis and is a great city for inspiration, shopping, and eating. I recently spent a few days there to do some fall shopping and to enjoy the beautiful city.
