Peanut Butter Oat Protein Balls

As you probably know, I’m big on having healthy snacks around at all times. Having snacks on hand throughout the day keeps me full in between meals, and it keeps me from being starving by the time I do get to eat a meal, which helps me be more mindful of what I make and eat.

One of my favorite go-to snacks are protein balls. They are a good homemade alternative to granola bars and can save you money too! I’ve experimented with a few different combinations, since I usually just use what is in my pantry, but this one has been my favorite combination so far!

One ball is pretty filling, feels like a treat, and has 6 grams of protein! They are also so easy to make and don’t require baking. I can make a batch in about 15 minutes. This recipe will make about 12 1″ balls (if you make them all the right size!).

Ingredients: 

1/2 cup peanut butter (I use natural peanut butter and find it sticks together better)
1/2 cup coconut flakes
1 tablespoon honey
1/4 cup dark chocolate chips
1 tablespoon chia seeds
1 scoop vanilla protein powder (linking the one I use)
1/2 cup oats

Add all of the ingredients and mix together on medium speed for 45 seconds. They should be well blended. Scoop rounded tablespoons of the mixture and form into a 1″ ball. I’ve found it’s easier to compress the balls instead of trying to roll them– rolling causes them to crumble more. If the dough really isn’t sticking together, add just a couple drops of honey! Don’t go overboard with the honey or it will all become too sticky and runny.

Keep the balls refrigerated. They will last at least a week in the fridge, if you don’t eat them all before!
