Healthy Breakfast Muffin Hacks

I am all about convenient healthy options for my on-the-go lifestyle. I try to save cash by packing as many healthy meals and snacks as I can each week, and one of my favorite go-to’s is a health(ier) breakfast muffin. Muffins aren’t the greatest for you, but there are really easy ways to make them better for you. Did you know that a blueberry muffin from Starbucks has 350 calories and 12 grams of fat? Yikes!

As prepared below, my muffin hack has 180 calories, less than 2 grams of fat, and is packed with fruit, walnuts, and over 12g of protein.


I start with Power Bake muffin mix in blueberry lemon flavor. This brand has a range of “better for you” mixes. Ideally, I would make these from scratch (and I should probably try..), but for now the box mix is what I use.

Instead of following the recipe, I use my own substitutes to make it even better for you. I combine the mix with a cup of plain greek yogurt and a banana as my liquids and mix it all together. If the consistency is still a little dry, I add water a tablespoon at a time. After the dough is a soft consistency, I mix in crushed walnuts and more blueberries.

Because of the added ingredients, the dough becomes enough to make 16 muffins instead of the 12 portions as shown on the box. Clearly I am all about baking and use leftover halloween muffin liners because that’s all I have right now.

I then followed the baking instructions per the box, but I always watch closely when I start to swap ingredients. With the greek yogurt, it always seems to take a few minutes longer for the muffins to firm up. I usually refrigerate half for the first week, and freeze the rest to store for the next week.
